Ingredients to make Egg Curry Recipe:
4 eggs (boiled)
2 tablespoons oil
10-12 curry leaves
1 tsp mustard seeds
2 onions (cut into pieces)
1 peeled ginger
1/4 tsp turmeric powder
1/2 tsp red chilli powder
½ kg tomatoes (peeled and chopped)
2 tablespoons coriander leaves
1 tbsp oil
2 tablespoons Urad Dal

To make egg curry recipe, first boil the eggs and peel them and keep them aside. After this, heat oil in a pan. Add curry leaves and mustard seeds to it. After this, add onion and ginger to it. Now let the onion become soft and cook on medium heat for 5 minutes.
After this, add turmeric and red chilli powder to it and run it well. Add tomatoes and salt to it and cook on low heat for 15 minutes. After this add green coriander and eggs. To make the tempering, add 1 tablespoon urad dal in hot oil and fry it till it becomes crispy. Now spread this tempering on the curry. Now egg curry is ready and serve it hot with roti, rice.
