If there is one chef who has put India on the global cuisine map, it is without doubt Vicky Ratnani. The genial, approachable and witty chef is liked as much for his gentle demeanour as he is for the dishes he creates.

With dishes spanning a wide variety of world cuisines, Vicky Ratnani’s cooking style is inspired by his experiences working abroad. A commerce graduate, he joined Hotel Management with no intention of becoming a chef. It was only during his second year that he discovered his love for cooking. Having helmed the kitchen onboard the prestigious Cunard ocean liners, he has worked with chefs from almost 40 nationalities.

That being said, Vicky Ratnani’s recipes are a reflection of his takeaways from his vast experience in exploring, cooking and experimenting. Be it his Sausage and Potato Casserole, his Tiramisu, his Panko Crusted Cottage Cheese or his Masala Chai Poached Chicken.

Versatile as he is, Vicky creates both Indian and foreign dishes with equal elan, though he says that Indian cuisine is somewhat more complicated because cooking Indian food requires a fair understanding of spices.

Vicky believes in always using the freshest ingredients that are locally sourced, and with good reason too. Ingredients that are brought in from long distances lose some of their taste and nutritional value along the way. Vicky loves to travel and explore local markets to see what new locally abundant ingredients he can incorporate into his recipes. This makes him get innovative and creative with his cooking, and in turn, leads him to create some of the most delectably unforgettable dishes.

According to him, recipes are just guidelines that you should use to learn techniques, but he emphasises that ingredients should be of primary importance in cooking.

In his show Vicky Goes Desi, he revisits the Indian kitchen, creating flavoursome and tasty Indian dishes in his own unique style. He gives a facelift to Indian cuisine with his recipes in the show, reinventing desi khana with a contemporary twist, making each dish a masterpiece.
