2. Chicken Cau Cau
This is a chicken stew, one of many Creole dishes popular in the region, created by combining African and Peruvian flavours. It is thought to have originated in Lima.
A previously obscure grain, its recent emergence as a superfood has shot Peru into the global culinary limelight. Quinoa has been a Peruvian staple for centuries and it is rich in proteins, antioxidants and minerals.
4. Lomo Saltado
This is essentially stir fried meat in a mix of sauces with aji chillies, onions, tomatoes and potatoes and served with rice and quinoa. This is a spicy dish and a testament to the Asian influences on Peru’s cuisine.
5. Pollo a la Brasa
Also known as blackened chicken, this is the Peruvian version of grilled chicken. It is one of the most commonly eaten chicken dishes in Peru, typically served with fries and accompanied by creamy mayonnaise and aji chilli sauce.
